Ingredients
  

For the crostini:

  • 1 baguette sliced into 1/2-inch pieces
  • 2 tbsp olive oil

For the garlic shrimp:

  • 1 pound large shrimp peeled and deveined
  • 2 tbsp butter
  • 3 to 4 cloves garlic minced
  • Salt and black pepper to taste
  • Red pepper flakes optional
  • Fresh lemon juice

For the avocado layer:

  • 2 ripe avocados
  • 1 tbsp lemon or lime juice
  • Salt to taste

Optional toppings:

  • Fresh parsley or cilantro chopped
  • Grated parmesan cheese
  • Cherry tomatoes finely chopped

Instructions
 

  • Toast the bread: Preheat your oven to 400°F. Brush baguette slices lightly with olive oil and place them on a baking sheet. Toast for 6 to 8 minutes, flipping halfway, until golden and crisp. Set aside.
  • Prepare the avocado: In a bowl, mash the avocados with lemon juice and salt until smooth or slightly chunky, depending on preference. Set aside.
  • Cook the shrimp: Heat a large skillet over medium heat. Melt the butter, then add the garlic and cook for about 30 seconds until fragrant. Add shrimp, season with salt, pepper, and red pepper flakes if using. Cook for 2 to 3 minutes per side until pink and opaque. Finish with a squeeze of lemon juice.
  • Assemble: Spread avocado mixture onto each toasted crostini. Top with garlic shrimp and finish with herbs or optional toppings.
