Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups milk of choice
  • 1 large egg
  • 1/4 cup maple syrup or honey
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups mixed berries fresh or frozen

Instructions
 

  • Preheat your oven to 375°F and lightly grease an 8x8-inch baking dish.
  • In a large bowl, whisk together the milk, egg, maple syrup, melted butter, and vanilla until well combined.
  • Add the oats, baking powder, cinnamon, and salt. Stir until everything is evenly mixed.
  • Gently fold in the berries, reserving a small handful to sprinkle on top.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Scatter the remaining berries over the top.
  • Bake for 35 minutes, or until the center is set and the top is lightly golden.
  • Let cool for 5 to 10 minutes before slicing and serving.

Notes

Tips for the Best Baked Oatmeal

Use rolled oats, not quick oats, for the best texture. Quick oats can become mushy once baked.
If using frozen berries, do not thaw them first to prevent excess moisture.
For extra richness, use whole milk or a creamy plant-based milk like oat milk.
Let the baked oatmeal rest briefly after baking so it sets properly and slices cleanly.

Variations and Substitutions

You can easily customize this recipe based on what you have on hand. Swap the mixed berries for chopped apples, peaches, or bananas. Add a handful of chopped nuts like walnuts or almonds for crunch. Stir in chocolate chips for a sweeter version, or add shredded coconut for extra texture. To make it vegan, use plant-based milk and replace the egg with a flax egg.
